I am building a large wraparound workbench/computer desk. And I plan on using some high quality plywood, but I want to finish it somehow. I was looking at my computer desk that I bought at a Wal-Mart and the particle board it is made out of is covered in somesort of veneer like material. I am trying to find something similar I can finish my workbench with, but am having no luck. I don't want a wood veneer, something like that adhesive stuff you put into cabinet shelfs but heavier duty.

I don't know whether you are looking for appearance or durability or some combination. If you are going to use plywood, you might choose a hardwood plywood with a good face to it and stain and finish it. The appearance would come with the plywood and most stains and finishes would be satisfactory for office usage.
The plywood face would be securely attached to the substrate, so you would not have to deal with attaching it or worrying about its coming loose.
The plastic films on the type of furniture you describe are often referred to as contact paper. As the name implies, it adheres on contact.
