how do you remove the key cylinder to re-key a lock?

Welcome to the forums Bill.
It depends on what type of lock it is and the manufacturer. Many locks have to be taken apart to access the cylinder assembly.
Some exceptions would be Schlage key in knob and the Kwikset Titan; which need keys.
If you are having someone do this for you, you could bring them the whole lock and let them take care of the details.
