We're converting an existing bedroom into a master bath. The walls are currently button-board and plaster. Should we remove all of the plaster & re-wall with greenboard or is plaster a suitable wall material for a bath? Does the fact that we'll probably have to open many areas of the walls for plumbing & electrical make more of an argument for stripping the walls bare?

This is a very old wall system. It's ok if there are layers of oil based paints on them. However, once you start poking holes in the wall, the overall structure becomes comprimised. I would remove the old wall and replace with cement backer board. Unless you plan to install ceramic tile, this is the absolute best way to go.
