I need to replace the strainer and the strainer grid in my upstairs bath/shower
combination. Can I do this and if so how?
I am worried about causing a leak and not being able to see it because I can't see the pipes.

Replacing a drain in my experience can go either way. I change at least 2 per day and I have rarely ever had one come out easy. Most of the time they are rusted and welded to the pipes below by combination of rust and hard water deposits. You can purchase a drain pulling tool but in all honesty I paid for two industrial drain pullers and in 5 years I they have worked maybe 10 times. I Usually have to beat, chisel, or cut them out. On some rare occassions though I have had them spin right out but for the most part I dread replacing them. Another concern is that when you pull the drain sometimes the pipe below will twist and go off center of the drain hole and it can be a pain lining it up.
I do it as a professional refinisher so that our coating will go beneath the drain. You must be sure that you line up the threads properly as well. Be sure and replace the rubber washer that sits between the drain pipe and the tub. The fact that you are working on the second floor inclines me to encourage you to use a plumber. If you dont install it correctly you run the risk of water dripping through the ceiling on the first floor.
