I made a small L-shaped wall on one side of a brick paver patio, using old non-standard concrete blocks (2 high, 3 long, with 2 high 1 long on the short side that connects to a porch).
I would like to finish off the top with a wood board, but the top is not level. It isn't drastically different, but there are high and low spots.
What can I use to fill in the difference? Or is there something other than wood I can use to make a counter/plant rest/extra seating section?

You could set the board in place on top of some concrete to form it. Then come back and set the board or some small blocks as spacers to keep it off the concrete. The concrete would "even" out the wall and the board could serve its purpose.
