After replacing an old tub and re-insulating the walls, should I use a plastic vapor barrier? There will be greenboard, cement board and ceramic tile on this wall.

ALWAYS use vapour barrier on exterior walls. This will help protect the interior of your walls regardless of what is on the surface.
