I have a huge (10ft) "French" skylight that consists of many glass panels. Unfortunately any caulking material I have used to seal the glass needs to be replaced on a yearly basis. This entails scraping and re-applying the sealent.( Not an easy task as there is no easy way to support yourself).
My Question is what sealent would be the best in terms of handling the 100+ temperatures and baking Sun of Texas, as well as the few sub-freezing days in the winter? And how long should I expect it to last?

Check with a local glass shop. There are several sealants that will seal the glas to the frame and withstand the temp. extremes.
