My 3/4" plywood subfloor is not level in some areas, and I'll need to correct this prior to putting in my hardwood. What type of floor leveling compound have people used with success???

Ardex Self-Leveling Compound is one such product for taking dips and sags out of floors. www.ardex.com

I am installing engineered wood product, 1/2" 5 ply, all maple, and the floor boards have a couple of dips, less than 1/8" - is this significant and will we need to patch prior to installing on a nail down installation?

Do the instructions for your product give any guidance? My hardwood instructions say that the floor should be level within 3/16" within a 8 foot radius.
