What is the minimum distance required from the bottom of the sink to the bottom of the p-trap? I'm wondering if my plumber roughed-in the bathroom sink main drain pipe (the one that goes into the wall) too high. Logic tells me that the lower it is, the easier water will flow out. Thank you.

Water drains by gravity, and as long as the drain pipe from the trap is not "uphill", it should work fine.
You can adjust the height of the trap with its connection on the tailpiece. Shorten the tailpiece of the sink drain, if necessary. If you can't shorten the tailpiece any, then you may have to lower the drain pipe connection from the wall.
Normal drain line slope is 1/4" per linear foot.
