I'm finishing off a couple of rooms in a garage that I'm too cheap to heat much past 55 degrees. The first coat of mud dried in less than 24 hours, except in the corners, where the mud way up in the corners is still a darker color and a bit soft, and on one seam where I ended up a little thick on the application. I have time to wait, but just out of curiosity, what would happen if I DID second-coat over the wet corners? Would it eventually dry just fine or would that be asking for trouble?

Welcome to the forums,
I'd let it dry completely so you can give it a quick sand before you do the next coat. Was 80 here today in Norther Mo., surely it'll be above 60 there by tomorrow. Also a good idea to open a window or door a crack to let a bit of ventilation thru the place, this will speed up drying times.
