I currently have sheetrocked walls in my bathroom (1/2 inch sheetrock to be exact) and I would like to tile from the floor up to about half the height of the wall.
Could I lay the tile right onto the sheetrock? Do I need to put in thicker sheetrock or cement board in order to do put the tiles in?

I would do cement backer board behind your tiles. Basically apply this to your studs to the point where you will be stopping with your tile and the rest in greenboard.
