I am building an island countertop out of marble agglomerate tile. I know all of the disadvantages of the marble but I like it. Someone told me I could put the tile as close as I could get to one another and grout between the bevels of the tile. Will the grout be strong enough not to crack, without being all the way between the tiles?

No, not typically. Try a space of 1/16th inch, that's still small if you wanted a clean look. Besides, you don't want debris and crumbs in between the tiles, where it can cause problems. It will collect there if the grout joint isn't closed completely.
