I need to level my concrete garage floor as I wish to make it look less like a garage and more like a living space. I could run joists and lay a subfloor, or have even considered pouring more concrete to level the floor. Any other suggestions or warnings?

It all depends on how much your floor is out of level. However much it is, do not try to level it with concrete. It will just flake out.
