I will be pouring some concrete steps and am courious how long I need to leave the forms in place before I remove them to finish the risers and exposed side.

Overnight. That's the short answer. The long answer involves temperature, humidity, the composition of the base, the composition of the concrete, the moisture content of the form lumber, ... Stick with the short answer.
