I own a 14 foot aluminum starcraft fishing boat {3 seats}and was wondering if I were to remove the center seat to open it up for more room would this be detrimental to the structural integrity of the sides??

Removing the seat would probably have a deterimental effect on the boat structure. You can remove it if you want less seating and more cockpit room, but I'd replace it with a sturdy cross-member to maintain structural integrity.
