My home has previously had foundation work & needs it once again. I cannot have it done at the current time. My question is: if I caulk all the outside windows, door frames now, will it cause problems when I have the foundation re-leveled again?

You'll just probably need to caulk again after your foundation work is done, as it will most likely shift some surfaces which you have caulked. But no harm done and you get the benefit of the caulking till your other work is done..
