I'm 95% settled on the Kahr 7mm engineered floating floor.
I like the idea of engineered floors, real wood appearance and
no repeating patterns.
My last concern is the thinness of the veneer. They say it can
be refinished but I don't see how that's possible. Can I get some experienced input on this product.

Compared to laminate, I like the Linnea. It is a 7 mm product, sawn face, (not a rotary peel), and uses a HDF core. The joint system they use fits nice; i've done a couple of jobs of it and thought it a good product. Kahrs has been around a long time, and they stand behind their products.
You can renew the finish on the product, but I would not try resanding it. If you had a nasty ding or scratch, you'd be better of replacing the board. Get a little extra, depending on amount of flooring.
