I'm installing a laminate floor in my kitchen. I actually purchased some Wilsonart "Estate Classic" from a Habitat for Humanity outlet store. ($1.20/sq. ft.). I'm clear on the floating floor concept, however, it would seem contrary to apply the flooring underneath a big refrigerator. Wouldn't this restrict movement? Should I stop short of the fridge or what? Also, I've read post regarding the quarter round along the kick panels of the cabinets. Should I space something under the quarter round or just lightly rest it atop the flooring and nail it to the kick panels? Thanks in advance.

Install laminate under the Reefer, it may get pretty yucky but you won't see it and you will be able to roll the appliance out for cleaning. The quarter round will hide the required expansion gap, see Wilsonart installation instructions.

from everything that I have read, you should nail the quarter round to the kickplate or moulding and not the floor so that the wood floor is able to expand and contract under the quarter round

Nail the quarter round to the cabinet kick plate.
