I need to deepen the mortise that the latch sits in my solid core doors. I know that I will have to chisel. Any tips on getting it right and the same depth across the area.

Not much-score the edges of the mortise with a utility knife and use a sharp chisel to shave a little at a time. If you do happen to go too deep, you can shim the latch to the proper depth. Good luck.
