I need to dehumidify 3 Br's, all on the same floor, approx. 75 square meters in area. Can I place a household dehumidifier (if so, what capacity?) in the hallway between all 3 BR's and do them all at once, or will I need a seperate dehumidifier for each room?

The manufacturer's instructions will give you information that should help. Dehumidifiers come in different sizes.

You need to know:
If a space is closed from the rest of the house a dehumidifier will lower the humidity in the space. Open the door and the humidity from the rest of the house moves in to equalize the water vapor pressure in all of the connected spaces. Thus, to do any part of the house, without dehumidifying the whole house, you need to keep the area closed off. Size the dehumidifier accordingly.
