In a window air conditioner unit, what makes more noise, the fans or the compressor? No specific brand, just in general.

Also, for a small, simple cooling system (similar to a window unit), could I use compression fittings, or would I have to sweat them?

It may vary by brands... Mostly it's the compressor that your going to hear running... But then you may hear the air movement from the fan..

We have a Maytag 5,000 BTU (made by Fedders) in our bedroom it runs really quiet, and it don't wake you up in the middle of the night. You may hear the compressor.

In the A/C lines, you do NOT use compressing fittings.. You will need to braze them to make connections.
