I need to attach dummy cameras to brick garages. it's single layer brick. what would be the best way to do this. each camera mount has three holes.

If you just can't attach the camera moutns to wood, I would attach small pressure-treated 2X4 blocks to the brick, and then mount the dummy camera to the block.
Brick is hard to drill, but mortar isn't.
Use an electric drill with a masonry bit to drill two side-by-side holes in the mortar between bricks. Tap in anchors for screws to hold the blocks, and screw the camera mounts to the blocks.
That's one way.

That would probably work, I didn't think about that. the only concern i have( and I have to take another look ) is that the way the cameras look. I don't want them to look fake. Attaching a metal junk box should attach just the same way right?

Yep.
You could put a jbox with cover, drill the cover and use screws and nuts to hold the "cameras" to them.
