I have damaged walls from contact, yes, contact paper. What, if any, are the advantages to skim coating? Is it prone to cracking? Should I just rip down every wall in the house and start from scratch?

Skim coating gives a silky smooth, fairly hard finish to a wall. To some extent, it will deaden sound. It should not be cracking if applied correctly. Conversely, plain sheetrock feels cheap and often shows nail heads and seams.

You'd be crazy to tear it down. Chances are the contact paper would have damaged sheetrock or plaster. Skim coating is fairly easy to repair.
