I have a small laundry room in which I recently had to cut two holes in the ceiling - one maybe 6"x6", and another 12"x18" to repair two separate plumbing leaks. This ceiling is textured, something I've never done.
I could cut out the holes to install sheet rock across the crossbeams, but I doubt I could ever match the texture.
Should I resign myself to the inevitable, and remove the entire ceiling (4'+ x 8')?

Not necessarily.
If it is popcorn type ceiling texture, you can buy matching texture repair stuff in a spray can.
If it is sponged or brush swirled, you can practice duplicating it on pieces of cardboard until you can closely match it.
Give it a shot.
