Probably a dumb question that will be answered when I buy the fan but When installing a fan in a bathroom, do you vent it into the attic or up through the roof? Thanks

You should never exhaust air into spaces within walls, ceilings, attics, crawl spaces or garages. The humidity may damage the structure and insulation. Venting is usually done through the roof or wall. Applications will be based on your current site conditions.
You're right, the instructions in the box will direct you to how to install.

The soffit is the roof over-hang outside, correct?
Are there pros/cons to exhaustiung the fan here? I have a tin roof and don't want to have go that route.

I'm not in favor of going through soffits but to each his own. I prefer to go through a roof or side wall. Even on homes with Brick exterior the installation is not hard. Only issue is running electrical but even then it's easy. With various venting caps available, there are colors available or break out the can of spray paint.
