As the subject states...Also I have heard that "smooth" walls are getting popular again opposed to orange peel. Is that just priming/sanding/painting on drywall, or is there actual texturing that is thin and smooth?

The answer is the prime, sand and paint! Little more work than orange peel since you want everything to look great when it is done. Orange peel allowed you to have some errors but weren't really noticable after you painted it.
