I have a Frigidaire Gallery gas range. Model # FGF378WCCA
serial # VF50504605. I purchased this range used and I do
not have the owners manual. My guestion is how do I adjust
the digital oven thermostat readout so I can increase the temperature setting which is off by about 20 degrees?
I know this is probably explained in the owners manual which
I do not have.

About the best advice I can offer you on this question is to contact the customer service help phone number, visit Frigidaires online web site. Another may be to post this exact question in the electric appliances topic.

Each range manufacturer has slighly different methods, based upon the brand of thermostat used. Another possible source is your local retail appliance parts store and or the web site of the thermostat manufacturer.
