I have an old table (don't know how old- rectangular when folded, unfold top and turn to make a card-sized table, chipendale legs). The vaneer on the top is dry and cracked. Is it OK to apply linseed oil to it before I apply the stain and finish? Also need to know what kind of wood has a reddish tint?

DON'T use linseed oil before staining/finishing. It takes forever to dry.
Stain as you would prefer, then finish. Repair of veneer that has cracked (from drying out) is best left to professionals.
Many varieties of mahogany have a reddish cast. Cherry has a reddish brown cast. Most gaming tables were surfaced in mahogany.

If you can find someone in your town that builds furniture, generally they can order a piece of veneer for you to match whats already on the table. I would go ahead and have them repair it. (It's probably a little cheaper than you think to have it done.)
