I have removed all of our old plaster & sheetrock in our kitchen. Is it better to use 5/8 inch on the celing or is 1/2 inch OK? Also what length drywall screw should I use on either thickness.

You're suppose to use 5/8" on the ceiling to prevent sagging.
Can you use 1/2", sure, but if it sags, you'll be tearing it out and doing the job over the 5/8". Best to do it with 5/8" the first time and be done with it.

Use 1/2". It will cost less and be easier to hang. If your ceiling joists are 16 inch centers it won't sag. Use 1 1/4" coarse thread drywall screws.

1/2" is required for ceilings with standard framing. 5/8" is usually used for fire rated walls.
