I know on walls you run the drywall long side down followed by another sheet on top, but my question is on a ceiling is there a correct way, I have a room that is 15ft wide & 20ft long the ceiling beams run the 15ft direction I had hoped on using 16ft boards cutting off a foot, to cove the 15ft span ,but someone told me they should be running the other way to span more beams which is correct thanks for any replies

You should run the drywall the same way as on the wall. That is you need to run your rock perpendicular to the ceiling joists. If you run them the other way you will have to rip some down because there is no way the joists are exactly 4'. That will leave you with a 15' butt joint. Plus it makes your structure stronger.
Remember to stagger your butt joints when you hang.
